Directions
Preheat the oven to 350°F.
Prepare the Mahatma® Whole Grain Brown Rice according to the package directions. Set it aside to cool slightly.
Place the blueberries in a large mixing bowl. Add the lemon juice and ¼ cup of flour, then gently toss until the berries are evenly coated.
Fold the cooked brown rice into the blueberry mixture.
Transfer the mixture to an ungreased 2-quart square baking dish and spread it evenly.
In a separate bowl, combine the brown sugar, remaining ¼ cup of flour, margarine, and cinnamon.
Use a fork or your fingertips to mix the ingredients until the topping resembles moist, crumbly sand.
Sprinkle the topping evenly over the blueberry and rice filling.
