🍴Teriyaki Chicken and Rice Lettuce Wraps

When the rain is pouring outside, and dinner is still a few hours away, it is the perfect time to prepare something simple, flavorful, and satisfying. 
These Teriyaki Chicken and Rice Lettuce Wraps combine tender chicken, fluffy Mahatma® White Rice, crunchy vegetables, and crisp lettuce for a meal the entire family can build and enjoy.

Prep Time: 15 minutes
Marinating Time: 30 minutes
Cook Time: Approximately 25 minutes
Serves: 6

Ingredients

  • 1 cup Mahatma® White Rice

  • 1¾ cups chicken broth

  • ¼ cup water

  • 1 tablespoon cornstarch

  • ½ cup teriyaki sauce

  • 1 pound boneless, skinless chicken breast, thinly sliced

  • 1 can (8 ounces) sliced water chestnuts, drained

  • 2 tablespoons vegetable oil

  • Rice noodles, cooked according to package directions

  • 4 carrots, shredded

  • Iceberg lettuce leaves, washed and separated

  • Additional teriyaki sauce or your favorite dipping sauce, optional

Directions

  1. Prepare the Mahatma® White Rice according to the package directions, replacing the regular cooking water with chicken broth for additional flavor.

  2. While the rice is cooking, whisk together the water and cornstarch in a large bowl until smooth.

  3. Stir the teriyaki sauce into the cornstarch mixture.

  4. Add the sliced chicken and drained water chestnuts. Toss everything together until the chicken is evenly coated.

  5. Cover the bowl and allow the chicken to marinate in the refrigerator for 30 minutes.

  6. Heat the vegetable oil in a large skillet or wok over medium-high heat.

  7. Remove the chicken from the marinade and stir-fry it in small batches. Cook until the chicken is lightly browned, no longer pink in the center, and reaches a safe internal temperature of 165°F.

  8. Prepare the rice noodles according to the package directions and drain well.

  9. Arrange the cooked rice, rice noodles, shredded carrots, teriyaki chicken, water chestnuts, and lettuce leaves on a large serving platter.

How to Assemble the Wraps

Place a spoonful of rice inside a lettuce leaf. Add a small portion of rice noodles, shredded carrots, and teriyaki chicken. Fold or roll the lettuce around the filling and enjoy.

Serve with additional teriyaki sauce or your favorite Asian-inspired dipping sauce on the side.

Quick Tip

Keep the lettuce leaves chilled until serving time. Cold, crisp lettuce creates a refreshing contrast to the warm chicken and rice.
